Ingredients for 2 people:
1 quarter chicken
20 g of Massaman curry paste
400 ml coconut milk
1 onion of approximately 250-260 gr
2 potatoes of approximately 220 gr
15 gr of cashews
20 grams of peanuts
50 gr of palm sugar
1 teaspoon of salt
3 teaspoons of fish sauce 3
3 teaspoons of tamarind paste
1 cinnamon stick
3 star anise
Elaboration:
Step 1: In a pan, put 250 ml of coconut milk and add the 20 gr of massaman curry paste, stir it all and when it starts to release its aroma and red color in about 5 minutes, add the palm sugar, salt, the tamarind, the fish sauce, the cinnamon and the anise and leave it on medium heat for another 3 minutes
Step 2: Add the chicken cut into 2 or 4 parts, add the rest of the coconut milk and cook over medium heat for about 5 minutes. Stir from time to time and change the chicken to one side.
Step 3: Add the potatoes cut into 4 or 6 pieces, cover the pot and cook over medium heat for another 10 minutes, stir everything from time to time.
Step 4: Add the coarsely chopped onion, stir everything, cover the pot and let it cook for another 10 minutes, stirring from time to time.
Step 5: Add the cashews and peanuts, stir everything and the curry is ready.
Serve with white jasmine rice
